This wikiHow will teach you how to cancel your Google One subscription using a web browser and the mobile app. If you cancel your account but have more than 15GB of storage used, you will not lose those files, but lose access to that service. For instance, if you have 17GB of files in Google Drive, you will lose the ability to sync, upload, create new files, or edit existing ones; or if you use Gmail, you will not be able to send or receive emails. When you cancel your membership or subscription, you'll be able to use the perks of your subscription (like hotel discounts) until the next billing period; you will not be refunded for the remaining time for the subscription period.
