    Yes, if you allow it to dry all the way. Moist wood is to hard to use, but dry wood can be used.

    I recommend to follow the instructions/descriptions that came with the smoker. From experience I think we used a small replacement for the smoke.

    If you have a small smoke-oven, I would not smoke bacon or sausage in it. Instead I would ask the butcher or local fisherman if he would smoke my fish, sausage or bacon.
